This weeks firsts:
1. First time I didn't wear a coat when I left the house since October!
2. First time I ran outside without wearing my Nike running jacket since October!
3. First time I haven't seen my breath in the morning since October!
4. First time I have overheated running outside since September!
5. First bike ride I've been on in ages!
6. First time making fish tacos!
7. First time being on a bike ride with my hubby!
I'm beginning to think October was the culprit! Old man winter sure had his fun this year. I'm glad to see that guest go...he's almost overdone his welcome!!
Today was the warmest day this year...so we had to celebrate!
Ams and I completed a 3 mile run.
Dustin, Andrew, Ashley, and I enjoyed a 6 mile bike ride.
And Dustin and I enjoyed scarfing down some much needed fish tacos!(Recipe Below)
Happy Thursday! Xoxo
Fish Taco Recipe:
Combine:
2 Tbsp Olive Oil
1 Tbsp Chili Powder
1 tspn lemon zest(grate the peel of a lemon)
Place two fish fillets in sauce. Make sure to coat the entire fish with sauce and then place in skillet over medium heat. Cook all the way through(7-10 min). Remove from heat and cut into small pieces.
Combine (for sauce):
1/2 cup Sour Cream of Greek Yogurt
1 Tbsp Lemon Juice
Place a few flour or wheat tortillas on griddle or in skillet to make nice and crispy.
Make coleslaw or if you are like me just buy a ready made bag:)
Serve with avocado, lemon&lime wedges, rice, and coleslaw mix!
Bon Appetite!
