Roasted Grapefruit




The most amazing post workout fuel, snack, and breakfast...brought to you by Jillian Harris...I give you...

Roasted Grapefruit

Ingredients
1 half Grapefruit
1 teaspoon of butter or olive oil
1/8 cup or a handful of granola of your choice
1 tablespoon of Brown Sugar
1 dash of cinnamon
2 heaping tablespoons of Greek yogurt
berries for garnish

Steps
1. Preheat oven to low broil (350)
2. Cut grapefruit in half
3. Cut the triangles of fruit out, following the natural divisions between pieces
4. Put the grapefruit in a small bowl
5. Mix the butter/oil, granola and brown sugar into a paste
6. Pile paste onto top of grapefruit and spread evenly
7. Lightly Dust cinnamon on top
8. Roast in oven approximately 5 minutes or until granola mixture is golden brown (keep an eye on your tasty Grapefruit so it doesn’t burn!)
9. When done, put in a bowl, garnish with yogurt & berries... and enjoy!
